An exhibition kitchen will be the star of the show and focus all attention on a wood-burning pizza oven, a wood-burning grill and the graceful dance of the Cattivella cooks. Several lucky guests will sit overlooking the pastificio (pasta table) section of the chefs’ counter while others might be seated with a view of the Butchers’ Corner where the Cattivella butchers will work on beef, pork, lamb and other whole animals. A wrap-around patio has stunning views of the mountains. The open kitchen will provide the perfect setting for the wildly successful cooking classes that Elise will continue to offer.

Chef Lon Symensma opened ChoLon in Downtown Denver in 2010, having already earned two stars from the New York Times during his time working at Buddakan in New York City. ChoLon, which means “big market” and refers to the largest Chinese-influenced market in Saigon, Vietnam, is Symensma’s homage to Southeast Asia and the years he spent traveling and living in that region.

After many years of evolution – including eight years on the 5280 Top 25 Restaurants List and being named a James Beard finalist for Best New Restaurant in America – Symensma and business partner Christopher Davis-Massey decided to open a second ChoLon location in Stapleton, home of the former Denver Airport.

At the helm of the new concept is Executive Chef Becca Henry, who started as a line cook at ChoLon’s downtown location in 2012 and spent years learning every detail of every station to finally assume the role of Executive Chef in 2019.

Los Chingones is Chef/Owner Troy Guard’s take on “badass” Mexican – sassy, spicy, sometimes irreverent, always an adventure. Opened in November 2013 in LoDo’s Ballpark neighborhood, Los Chingones was conceived from the ground-up as Guard’s own twist on Mexican. A second location opened in the Denver Tech Center in November 2015. Dig in to signature dishes such as the Tres Pig Nachos and the Fried Anaheim Relleno, and don’t miss Guard’s selection of signature tacos including Lamb Neck, Red Chile Pork Shoulder, Octopus and Beef Cheek. For the more adventurous diner, opt for “wild card” proteins such as kangaroo, snake, and camel, while enjoying sips from Los Chingones’ array of brews, tequilas and an ever-changing original cocktail list.
